Zuchinni and Chicken Salad – Green Food

The summer and heat invite us to consume more variety of fruits and vegetables, and the truth is that the options are almost endless. Surely the vast majority we just eat a few varieties of vegetables, and forget about others. Zucchini squash may be one kind of overlooked that besides providing more color and variety to our diet, we also provide high-quality nutrients.




Ingredients:
1 chicken breast
lemon juice
1/2 glass of wine
2 cloves
Salt to taste
3 onions white or purple
3 zucchini
2 white celery
1 bunch parsley
1 tablespoon chopped celery leaves
1 sprig tarragon
juice of half a lemon
1 / 2 cup white wine
1 / 4 cup cider vinegar
2 teaspoons sugar
oil, salt, pepper to taste

Directions:

Cut the chicken into medium pieces.

Put them in a bowl and sprinkle with lemon juice. Let them marinate in the refrigerator while preparing the rest.

Wash zucchini and cut into cubes.

Clean the onions and cut into medium slices.

Place in a pan two cups of water, juice of half a lemon, white wine, vinegar, sugar, tarragon sprig and salt to taste.

Cover the pot, bring the fire and when you release the boil add the zucchini and onions.

Cook for 8 minutes, remove and drain until cool removing the remains of the sprig of tarragon.

Cut the white celery into thin strips.

Remove chicken from refrigerator and bring it to cook in a pan with water, white wine, cloves and salt.

Boil until it is ready, drain and remove the cloves.

Place chicken in a bowl with the cooked vegetables, white celery, chopped parsley and chopped celery leaves.

Season with salt, pepper and oil to taste. Mix and leave in refrigerator until serving time.

Personal Suggestion: The zucchini is also a vegetable with high water content (including its share of water reaches 95 per cent) and low calorie level: as well as being good diuretic and cleanser, is recommended for those wishing to lose weight or maintain your figure , for instance, 100 grams provides only 15 calories.
