Is not known whether zucchini is from South Asia or Central America. So if given in writing, is already consumed the Egyptians, Greeks and Romans who were the Arabs who introduced it in the Mediterranean during the Middle Ages. In the countries of northern Europe, did not arrive until after World War II. The following recipe is a nutritious omelet with this vegetable.


Ingredients:

  • 6 eggs
  • 1 medium zucchini
  • 1 onion
  • 1 deciliter of olive oil
  • Salt

Directions:

Wash the zucchini before you cut into slices. If the squash has the thin skin, there is no need to peel.

Peel onion and cut into small squares.

In a skillet heat olive oil and cook the sliced onion.

Once cooked, add the onion slices zucchini and let cook together for 4 minutes.

Add the salt and drain in a colander over the oil pan where the vegetables are cooked.

Beat eggs and mix with onion and zucchini cooked in a skillet with a little oil and simmer former cook the omelet on both sides.

Personal Suggestion: The kids love the taste of this omelet. is ideal for a weekend breakfast. Serve with bread or crackers and a delicious orange juice.
