Ingredients:
1 cup and 2 tablespoons grated or trash zucchini
1/3 cup and 2 tablespoons and 1 teaspoon biscuit baking mix
3 tablespoons and 1 teaspoon grated Parmesan cheese
1/4 cup and 1 teaspoon shredded sharp Cheddar cheese
1/4 teaspoon dried oregano
2-1/2 teaspoons dried parsley
1-1/8 eggs, beaten
2 tablespoons and 3/4 teaspoon vegetable oil
1/4 large finely chopped onion
1-1/8 cloves chopped garlic
1/8 teaspoon salt

Directions:
Preheat oven to 400 degrees F (200 degrees C).
In a mixing bowl, combine the zucchini, biscuit baking mix, Parmesan, Cheddar, eggs, vegetable oil, onion, garlic, parsley, salt and oregano. Spread the mixture into a greased 9×13 inch baking pan and bake 25 to 30 minutes, until golden brown.
Allow the mixture to cool. Cut into small squares and serve warm or cold.
