Vichyssoise – French Food

The “Vichyssoise” is a typically French vegetarian recipe. It is a cold cream of leek. It is very refreshing, especially for summer. Some take it too warm in winter.
Ingredients:

- 2 large leeks (white part only)
- 1/2 large onion, grated
- 1 tablespoon butter
- 2 large potatoes
- 2 glasses of wine full of chicken stock or vegetable.
- 2 wine glasses filled with milk
- 1/5 liter of cream
- 1 teaspoon parsley or mint leaves.
- Salt and pepper
Directions:
In a saucepan melt the butter for 2 to 3 minutes, first add the shredded onion and soon the leeks cut into small pieces.
When lightly browned, add the potatoes peeled and cut into thin slices.
The broth is very easy to prepare, especially if it’s cubes (gets cold and when it begins to boil over medium they are added, they melt very easily). Boil it all very slowly for 40 minutes or less.
Once and done, cool. It then passes through the blender or mixer.
Stir in the milk and then return to spend together in the blender until creamy and smooth.
Pour the soup into serving bowl. Season with salt, pepper and a pinch of garlic powder (optional) and then added cream.
Personal Suggestion: Accompany this dish with French bread.It is best done well in advance (the day before). At serving time you can put chopped parsley or mint. Serve it very cold.
