Tittle: Toasted Mushroom sandwiches
Cook time: 15 minutes
Level:
Easy
Serving: 8

Ingredients:
1 tbsp butter
1/2 pound mushrooms, cleaned, stemmed, and chopped fine
1 tbsp flour
Pinch of curry powder
1/4 cup milk
Salt and ground pepper
8 thin slices dense white bread, crusts removed
Melted butter

Directions:
Melt the butter in a Casserole, add the mushrooms and cook rapidly over moderately high heat, about 3 minutes.

Sprinkle with the flour and curry powder and continue to cook, stirring, for about 2 more minutes, add the milk and cook, stirring, until the mixture is very thick.

Add the salt and pepper and taste. Spread the filling generously on one slice of bread, top with another slice, and cut in half so that you have a finger sandwich.

Brush each side with melted butter. Place on a cookie sheet, turn on oven to broil. Place the rack about 6 inches from the broiler.

Broil, when one side is golden, turn with a pancake turner and toast the other side. Serve immediately.

Personal Suggestion: sandwich can be delicious, fun, nutritious and fast to make. You can have them as a meal, or serve them at parties. In the event someone unexpectedly visits, you always have a quick way of serving them something healthy to eat.
