Ingredients:
1 1/2 cups multigrain penne pasta
9 oz fresh spinach leaves
1 tsp basil leaves
1 cup spaghetti sauce
1 cup diced tomatoes
2 oz cheddar Cheese, cubed
1 cup Mozzarella Cheese, divided
4 Tbsp Grated Parmesan Cheese

Directions:

Heat oven to 375ºF.

In a bowl, cook the pasta in boiling water for 8-10 minutes, in the last minute add the spinach to the water.  Drain and return to the bowl.

In a nonstick saucepan add the basil, the spaghetti sauce and the tomatoes; bring to boil. Simmer for 3 minutes; insert the cheddar cheese.

Add the Tomatoes mixture and add ½ cup of mozzarella cheese.

Spoon into a baking dish, sprinkle with the remaining cheeses and bake for 15 minutes.

Serve immediately.
