Hello Friends, the next recipe is a traditional dish frim Mexico, Mexican cuisine is not understood in the world without the chile, the pepper that some berserk and other haunts of pleasure to the slightest touch, which is not a novelty. This product is rich in vitamin C and A, l chile has shown evidence that it has the ability to lower cholesterol levels and is an excellent anticoagulant.

Ingredients:
2 Flour Tortillas halved and cut into 1/4 inch strips
4 cups chicken broth
2 cloves Garlic finely minced
1 small Onion chopped
1 tsp. chile powder
3 Fresh green chiles, seeded and chopped
3 large Tomato chopped
1/4 cup Fresh Parsley chopped
1 cup Cooked Chicken Breast skinned and shredded
1 oz. Lowfat Cheddar Cheese shredded
salt and Pepper to taste
Vegetable Oil cooking spray

Directions:

In a large saucepan, combine the chicken broth, garlic cloves, onion, chili powder and green chiles and simmer for 20 minutes or until the vegetables are tender.

Puree the soup mixture in a food processor or blender. Return it to the saucepan and add the tomatoes, parsley and chicken. Simmer for 15 minutes and season to taste.

Place the tortilla strips on an ungreased baking pan and spray lightly with vegetable spray.

Bake at 350 degrees for 15 minutes, or until lightly browned.

Ladle soup into bowls.

Top with tortilla strips and cheese; serve immediately.

Serve with Poppy Seed Cheese Chips.


Personal Suggestion: This is a delicious Mexican soup, you can change the variety of chile if you can not find what we recommend, this soup can be accompanied with a delicious chicken fajitas.
