Title: Sweet corn and basil soup

Hello Friends, this next recipe “Sweet corn and basil soup” is a delicious recipe. Corn is a cereal that brings great benefits to the body. Since ancient times has been linked to diet throughout Latin America, and then, after the arrival of Spanish conquistadors, came to occupy an important place in the diets of the European continent. Sweet corn is rich in carbohydrates, vitamins A, B and C, fiber and minerals such as potassium, calcium and phosphorus. Enjoy this great soup with your family.

Ingredients:
4 tbsp butter
2 sweet onios, chopped
8 white corn, kernels removed
8 cups water
¾ cup whipping cream
Salt and pepper to taste
½ Fresh basil, chopped

Directions:

Heat 2 tablespoons of butter in a large saucepan over medium heat.

Add half of onions and cook for 5 minutes.

Add the corn cobs and 6 cups water.

Boil until liquid is reduced to 2 cups (25 minutes).  Set  apart.

Strain the corn broth; discard cobs.

Heat remaining 2 tablespoons of butter in another saucepan over medium heat.

Add the remaining onions and cook until soft (5 minutes).

Add corn kernels and cook for 10 minutes.

Add strained corn broth and remaining 2 cups water.

Cook uncovered for 20 minutes. Cover and simmer for 10 minutes longer. Cool slightly.

Puree the soup in a blender until smooth, (work in batches).

Return the soup to the saucepan, stir in cream.

Season to taste with salt and pepper.

serve the soup plates and sprinkle with basil and serve.
