Hello friends, the next recipe is a traditional appetizer of Colombia. this country has a varied cuisine, a result of its diferent regions. the variety of flavors and ingredients in the kitchen came with the Colombian encounter between Aboriginal cultures and the Spanish and other Europeans who immigrated to this country during Colonization and the Conquest.For example, in the kitchen of the departments of Cundinamarca and Boyaca, emphasizes food made with potatoes, like the “Ajiaco” and “papas chorreadas” are the most popular dishes.

Ingredients:

4 medium red potatoes, scrubbed but not peeled
2 tablespoon vegetable oil
1 medium white onion, thinly sliced
2b tomatoes, peeled, seeded, chopped
1 teaspoon paprika
salt & pepper

Directions:

Boil the potatoes in lightly salted water for about 15 minutes. Set apart.

At the same time, heat the oil in a skillet over medium high heat and cook the onion for 2 minutes, after that add the tomato, stirring often, for about 8 minutes or until the onion is very soft.

Season with paprika, salt and pepper,remove the sauce from heat.

Place potatoes on a plate and pour over the sauce.


Personal Suggestion: These potatoes are used as an accompaniment to many dishes, such as roast beef or chicken stew. you can also serve as an appetizer for a lunch and accompany with a glass of beer
