Hello friends. The following recipe is from Italy, Since 1300 the use of the paste is broadcast throughout Italy and was at the beginning of the eighteenth century when the first born in Naples and rudimentary machinery for their production. The pasta is not an invention Neapolitan, but this is where we have reached the highest degree of perfection in its design, more specifically Gragnano, a few kilometers from the city Parthenopean, the site where he found the way to dry and preserve through the special climate that is created by alternative Ponentino winds (dry) with Vesubiano (warm and wet), enabling conditions for an excellent pasta manufacturing.

Ingredients:

8 oz pasta
2 boneless skinless chicken breasts
1 red or green bell pepper, diced
1 red tomato
6 large stuffed olives, sliced
1 clove fresh garlic, minced
Ground fresh chili paste
1 tsp chili oil
Parmesan cheese, grated
White wine

Directions:

Cook pasta according to directions, drain and set aside.

Cut chicken into squares and move to a bowl.

Add chili oil to chicken and toss to marinate then set aside.

Heat a large saucepan and add olive oil, add chicken to pan and cook on medium heat until done.

Add bell peppers, tomato and garlic then cook until soft.

Add about half cup wine to mixture and add olives.

Sprinkle Parmesan cheese on top to taste.

Add cooked pasta to chicken mixture and combine well.

When everything is hot, serve immediately.

Personal Suggestion: This pasta is a great option for a light and tasty meal. Serve with garlic bread and a cup of Sauvignon Blanc wine.
