Title: Spaghetti with cherry tomatoes and zucchini

Ingredients:
250g spaghetti
4tablespoons olive oil
2garlic clove, crushed
2 small zucchini, grated
250g cherry tomatoes, halved
1/2 cup grated parmesan cheese

Directions:

Cook pasta in a large saucepan of boiling salted water, following packet directions, until tender. Drain pasta, reserving 2 tablespoons cooking water.

Heat oil in a small, non-stick frying pan over high heat. Add garlic, zucchini and tomatoes. Cook, moving often, for 4 minutes.

Return pasta and reserved water to saucepan. Add zucchini mixture, add salt and pepper.

Toss over low heat until heated through. Spoon into bowl. Top with parmesan cheese and serve.

Personal Suggestion: This is a Mediterranean recipe to enjoy in the summer. This pasta is the perfect accompaniment to grilled meats. It is too a flexible dish, you can use onions or shallots singly or in combination.
