Shrimp Cesar Salad – Sea Food

Hello friends, This is one of my favorites salads. The Cesar salad was created by Alex Cardini, who was Chef of Hotel Peñafiel in Tehuacán. Cardini, the son of an Italian immigrant, made the Caesar Salad specially for a gourmet contest in Tijuana, winning first place with his innovative dish. in this recipe I’m using an ingredient that is not included in the original recipe as is the shrimp, This variation also makes it very appetizing. Enjoy this great dish with your family.



Ingredients:

Dressing:
2 Tbslight mayonnaise
2 Tbs water
2 Tbs fresh lemon juice
1 tsp grated Parmesan cheese
1/4 tsp freshly ground black pepper
1/8 tsp Worcestershire sauce
2 cloves garlic, minced

Salad:
3/4 Cup seasoned croutons
2 Tbs grated Parmesan cheese
1 lb medium shrimp, cooked and peeled
10 oz chopped romaine lettuce
chopped fresh chives

Direction:

Dressing:

Combine the mayonnaise with: water, lemon juice, parmesan cheese, pepper; worcestershire sauce and garlic. stir well with a fork.

Salad:

In a large salad bowl, combine the lettuce, 2 tbsp of cheese; the croutons and the shrimp. Toss well to coat.

garnish with the chives and put over the dressing.

Serve immediately.

 

Personal Suggestion: The Caesar Salad is an excellent appetizer for a formal dinner, you can also use chicken or bacon if you do not like shrimp.
