Title: Shepherd’s Pie
Cook time: 50 minutes
Level: Easy
Serving: 6

Ingredients:
2 tablespoons butter, cubed
1 tablespoon tomato paste
1/2 cup sweet corn, cooked
Freshly ground pepper
2 tablespoons olive oil
2 cups chopped onions
2 pounds roasted lamb
3 tablespoons flour
1/4 cup dry red wine
2 1/2 cups veal stock reduction
1/2 teaspoon dried thyme
1/2 cup sweet peas, cooked
1/2 cup small diced carrots, cooked
1 recipe Mashed Potatoes
Chopped parsley, for garnish
Salt

Directions:

Cook the onions in over medium heat for 3 minutes, season with salt and pepper.

Finely slice the lamb and add to the onions.

Add flour and cook 2 minutes, insert tomato and cook for 1 minute.

Stir in red wine and veal reduction, bring to boil.

Add thyme, carrots corn, and peas.  Reduce heat and simmer 12 minutes.

Pour into casserole dish, top with potatoes, spot with butter and bake at 350c for about 30 minutes, until potatoes are golden brown.

Remove from oven and serve immediately, garnish with parsley.

 

Personal Suggestion: The sherpherd’s pie is a vigorous casserole dish, very appropriate for your St. Patrick’s Dinner.

If you want you can add some grated cheddar cheese. Serve this dish with a green salad and garlic bread.
