Title: Rice with Pesto Sauce

Derived from the Provencal sauce, pesto, traditional Genoa, is fundamental ingredients basil and garlic and a sauce is smooth and easy to prepare that gives a wonderful flavor to any pasta or rice preparation.

Ingredients:

  • 50 gr. rice
  • 50 gr. fresh basil leaves
  • 2 tablespoons pine nuts
  • 90 gr. cured sheep’s cheese
  • 2 cloves garlic
  • Parmesan Cheese
  • Black pepper
  • Parsley
  • Salt
  • 60 ml. olive oil

Directions:

Cook the rice in double the amount of water for about 20 minutes.

Wash and chop basil leaves. Chop the pine nuts lightly.

In a skillet heat a little oil to medium heat and saute the garlic, basil, pine nuts and parsley.

Then add the feta cheese, stirring with a wooden spoon, season, and finally with a very low heat add the remaining oil. Remove from heat.

Serve the rice with pesto sauce on top, still hot, and sprinkle with Parmesan cheese.

Personal Suggestion: You can use the chopped preserved basil in the markets, but to taste the authentic pesto flavor it is preferable to use fresh basil leaves. Pesto sauce can also be done with a little milk or cream to make it more creamy.
