Tittle: Rice and tuna Salad with  olives
Cook time: 25 minutes
Level: Easy
Serving: 4

Ingredients:
150g long grane rice
150g tuna (in oil)
2 hard–boiled eggs, slices (optional)
100g green pitted olives
2 diced salad tomatoes
50g green boiled beans
50g boiled peas
1 small onion, finely chopped
2 tbsp chopped parsley
1 tsp cumin powder
2 lemon juice
6 tbsp olive oil
salt and pepper

Directions:

Boil rice in salty water during 15 minutes. Turn out into a colander, rinse in cold water, then drain. Put the rice into a bowl.

Mix it with the tomatoes, beans, peas, onion, tuna and cumin. Beat lemon juice with oil, salt and pepper.

Dress the salad. Serve in individual bowls. Arrange slices of boiled egg and olives. Garnish with parsley and serve.

Personal Suggestion: This salad is a Spanish recipe. Since quite a lot of centuries, olives are considered to be an essential ingredient in the Mediterranean diet. This delicious salad is perfect for a summer day lunch.
