In Japan they are lovers of coconut and some of the dishes in Japanese cuisine using this rich ingredient. A very special dish that can be found in Japan, especially in the trendy restaurants of fried king prawns with coconut.
Ingredients:
- 8 prawns
- 15 grams of grated coconut
- 6 grams Japanese breadcrumbs
- Rice vinegar
- Dashi broth
- Soy sauce
- Sunflower oil
- Lime zest
- 1 tablespoon curry powder
- 1/2 teaspoon sugar
- Salt
- 1 egg white
Directions:
Heat the dashi, vinegar, soy sauce and sugar in a wok. Set aside. Peel the prawns.
To make the batter the shrimp: coconut, breadcrumbs, curry, lemon zest and salt. Mix everything.
Whip the egg white. Shrimp batter in the egg and then in the mixture.
Pour oil into wok. Fry on both sides battered shrimp. Drawing board and drain.
