Title: Portuguese Chicken

Since the end nearest the old continent, comes this tasty recipe. Its delicious flavor and heat, will appeal to all those who appear for the dining room.

Ingredients:

  • A whole chicken, rather small
  • Two tablespoons of olive oil
  • One tablespoon of butter
  • Two red peppers are not too big
  • 1 onion
  • A can of tomato
  • 100 cubic centimeters of white wine (about half a glass)
  • 100 cubic centimeters of water
  • Half chicken bouillon
  • Three sprigs of parsley
  • Salt, pepper and paprika

Directions:

Season chicken with salt, pepper and paprika.

Heat the oil in a heavy-bottomed pot.

When the oil is hot, add the butter.

When butter is melted in the oil, add chicken pieces, skin side, until golden.

While Brown the chicken, cut the onions and peppers into strips.

When the chicken is ready, are you out of the pot and in the same oil with lard and chicken fat add the onions and peppers. Cook for 8 minutes and add tomatoes.

Let the mixture reduce onions. Cut peppers and tomatoes in half.

Add wine and let reduce by half again.

Add water, broth medium and return the chicken in the pot.

Cover the pot and let the chicken simmer for 20 minutes.

Finally, remove the chicken, to accommodate it in a serving dish and let the sauce reduce a couple of minutes add the chopped parsley.

Personal Suggestion: Cover the chicken with the sauce and serve with white rice or steamed potatoes.
