Ingredients:
6 eggs
1 medium zucchini
1 onion
2 tbsp of olive oil
Salt
Directions:
Wash the zucchini, cut into slices. If the zucchini has a thin skin, is not necessary to peel.
Peel onion and cut into small squares.
In a skillet heat olive oil and cook the onion for 2 minutes, add zucchini slices and the salt, cook together for 4 minutes. Set apart.
Beat eggs and mix with onion and zucchini cooked.
Using another saucepan put 1 tbsp of olive oil, add the egg mixture and cook 1 minute on both sides.
Serve immediately.
Personal Suggestion: This is a great recipe for kids, you can serve this dish for breakfast or snack, if you want you can add some slices of tomatoes to the omelette. Serve with bread and orange juice.
