Minestrone (means “serving dish”) is a specialty of Italian cuisine like a soup made with vegetables of the season, often you add some pasta or  rice.The next recipe is an delicious and healthy low-fat and vegetarian soup.

Ingredients:

  • 1 red onion, chopped
  • 2 garlic cloves, chopped
  • 1 bunch fresh parsley, chopped
  • 1 can tomato puree
  • 2 quarts vegetable broth
  • 5 sliced carrots
  • 4 celery stalks sliced
  • 1 small can kidney beans drained
  • 1 package small tortellini
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tbl oregano
  • 1 tbl basil
  • 2 tsp olive oil

Directions:

In a large saucepan, cook onion, parsley and garlic in olive oil.

Add celery, carrots, broth and tomato puree along with herbs; simmer approximately 30 minutes.

When vegetable are just about tender, add tortellini and kidney bean, until cooked.

Top with fresh parsley.

Serve immediately.

Personal suggestion: This soup is very easy and quick, it is perfect for a winter lunch and it is also great for pot lucks or parties. Serve with rice or garlic bread.
