Hello Friends, the following recipe is a delicious and refreshing pasta salad. In English-speaking countries, the name macaroni is customarily given to a specific shape of pasta, this pasta is often prepared by baking it with a sauce made from cheddar cheese. In this case we will use the macaroni to make a cold salad with vegetables.  Enjoy this great salad with your family.

Ingredients:

1/2 pkg. macaroni
1/2 c. diced unpared cucumber
1/2 c. diced green pepper
1 c. tomatoes
2 tbsp sweet-pickle relish
1 1/2 tsp grated onion
1/4 c mayonnaise
1/4 c dairy sour cream
1/2 tsp salt
dash pepper
1 hard-cooked eggs, chopped

Directions:

Cook macaroni as package label directs.  Drain, the rinse with cold water.

Place in large bowl.

Add cucumber, green pepper, pickle relish and grated onion; mix well.

In small bowl, combine mayonnaise, sour cream, salt an pepper; blend well.

Pour over macaroni mixture; toss until macaroni is well coated.

Gently mix in chopped eggs.

Refrigrate, covered, until well chilled, several hours or over-night.

To serve. Garnish with green with green pepper strips and quartered tomatoes.

Personal Suggestion: This salad is a good option when you want to leave the lunch ready the night before, you can also add other vegetables to the recipe such as peas and celery.
