Irish Omelet– St. Patrick’s Day
Title: Irish Omelet
Cook time: 10 minutes
Level: Easy
Serving: 4
Ingredients:
12 Small eggs
2 Lg. cooked potatoes mashed
2 Squeeze lemon juice
2 tb Chopped chives or scallions
Salt and pepper to taste
1 tb Butter

Directions:
eparate the eggs and beat the yolks, add to the mashed potato mixing carefully.
Add the lemon juice chives, add salt and pepper.
Melt the butter in the omelet pan.
Beat the egg whites until stiff and stir them into the potato mixture.
Cook the mixture until golden then run under the broiler to finish and puff it up.
Serve immediately.
Personal Suggestion: Enjoy this great recipe in your St. Patrick’s Day breakfast. This recipe is very easy to prepare. Serve with Irish Soda Bread or Buttermilk Bread and a cup of coffee.
