Ingredients:

2 bars Dark Chocolate, coarsely chopped
1 cup heavy cream
Soufflé:
8 Tablespoons unsalted butter, softened
1/2 cup bread flour
1/2 cup unsweetened cocoa powder
1 cup whole milk
4 bars Dark Chocolate, coarsely chopped
6 large egg yolks, at room temperature
1/2 cup Irish Crème liqueur
4 large egg whites, at room temperature
1/2 cup granulated sugar
1/8 teaspoon cream of tartar
Directions:

In a small saucepan put the cream and bring to a boil.
Add chopped chocolate to hot cream, immediately remove from heat.
Let stand for 2 minutes to melt chocolate. Beat until completely smooth.
Transfer to a small container; cover and set aside until to serve.
Soufflé:
Preheat to 400°F.
Position rack in center of oven and brush insides of 6 custard cups with melted butter.
Dust each ramekin with granulated sugar, tapping out excess.
In a medium bowl, using an electric mixer; beat butter, flour and cocoa powder at medium speed until blended (not completely smooth).
In medium saucepan, place milk and heat until warm.
While mixing at low speed, gradually add warm milk to butter mixture and mix until blended.
Return mixture to saucepan and cook over medium heat, stirring constantly until slightly thickened and hot. Remove from heat.
Add chocolate and let stand for 2 minutes; beat until chocolate is melted and mixture is smooth. One at a time, whisk in egg yolks until well blended. Whisk in Irish Crème liqueur; ransfer mixture to a large bowl.
Whit an electric mixer in a dry bowl, beat egg whites, sugar, and cream of tartar at medium speed until frothy.
Gradually increase speed to high and beat until soft peaks form.
Using a dry spatula, gently fold about 1/2 cup of chocolate mixture into beaten whites.
Gently fold egg white mixture into remaining chocolate mixture.
Ladle soufflé mixture into prepared ramekins, leaving 1/4 inch border at top.
Arrange ramekins on baking sheet and bake for 15 minutes, until puffed.
Serve immediately with the chocolate sauce.
