Title: Irish Cheese Soup - St. Patrick’s Day

Ingredients:
2/3 cup onion, chopped
2/3 cup carrot, chopped
2/3 cup celery, chopped
4-6 1/16 teaspoons butter
2/3-1 1/3 small potatoes, diced
4 2/3 ounces Irish farmhouse cheese
2 2/3 cups vegetable stock
4 cups half-and-half cream
1/2 cup flour
4 ounces guinness beer

Directions:

Fry in butter the onion, carrots & celery until just tender.

Add the flour, 2 ounces of beer, after that, add the half and half cream in small amounts.

Put in the rest of the beer, and the potatoes.

Cook gently until potatoes are tender.
