Green Plantains “tostadas” – Colombian Food

Hello Friends, this is a traditional recipe from Colombia, “tostadas” are daily used to accompany various dishes especially at lunchtime. As with other cultural events, cuisine ranges from Colombia in its various regions, the main elements of the Colombian diet are root vegetables, particularly potatoes, cassava, plantain and yams. Enjoy this great appetizer with your family.

Ingredients:
Patacones:
4 green plantains
vegetable oil
salt
Sofrito sauce:
2 large onion
2 pounds tomatoes
1 garlic
4 tbp olive or canola oil
1 tbp paprika
1tbsp of coriander (optional)
Salt and pepper
Directions:
Patacones:
Peel Plantain, and cut it width wise into 3 or 4 pieces.
Heat 1″ of vegetable oil on medium heat.
Fry plantain pieces on both sides for about 3 minutes, or until the pieces are golden.
When they are golden, remove from pan and place onto a plate covered with a paper towel.
Place the pieces one at a time between 2 pieces of waxed paper, and flattening with your hands or help with a flat plate, just gently flatten them till they are about 1/4″ thick.
Place in the hot oil again and fry until both sides are golden brown.
Drain on paper towel covered plate (change paper towels in between the 2 fryings).
Sofrito:
slice the onion.
In a saucepan on low heat, put the olive oil, add the onions, salt and cook for 3 minutes.
After that, add the minced garlic.
When the onions look a little brown, add the paprika, stirring constantly for about 2 minutes.
Insert the tomato and cook for about 5 minutes more.
Serve the plantains warm with de sofrito sauce.
Personal Suggestion: I love green plantains, i used to prepare them on weekends. You can serve this recipe like appetizer for a special dinner. your friends will be surprise with this great combination of flavors.
