Frijoles Antioqueños “Red Beans” – Colombian Food

Hello friends, the next recipe comes from the beautiful country of Colombia. Red beans are a vital meal of the Colombian region of Antioquia. Serve as a base for other dishes emblematics of the region. Ethnic diversity is also reflected in Colombian cuisine, it is mixed with ingredients indigenous and Spanish forms of development in Africa, Arabic and Spanish. The main ingredients are in Colombian cuisine: Pork, potatoes, beans, corn, chicken, rice and soups.

Ingredients:
4 cups of red beans
2 green plantain, peeled and cut into pieces
1 medium carrot, peeled and grated
1 large white onion, minced
200 grams of minced pork bacon
2 tablespoons oil
2 tablespoons tomato sauce
1 1 / 2 cup long onion
2 tablespoons tomato sauce
2 tomatoes
salt, pepper and cumin to taste.
Directions:
The night before, soak beans in water to cover. Drain and rinse before cooking.
In a pressure cooker add the beans and bacon cook for 40 minutes.
In a medium saucepan place the 2 kind of onions and cook until looks transparent, add chopped tomatoes and carrots, cook for 3 minutes, when they are well fried add tomato sauce to taste and reserve.
When the beans are soft add the bananas green (chopped), salt and pepper and leave to pressure for another ten minutes.
Then uncover them and add the onion and the tomatoes that we had before, cook another minutes or until it thickens.
Personal Suggestion: This recipe is one of my favorites, i love red beans. Served hot and accompanied with white rice.
