Hello friends, The Focaccia is very popular as a snack in Italy, it is usually seasoned with olive oil and  herbs and may be topped with meat, onion and cheese or flavored with a number of vegetables. Enjoy this great bread recipe with your family.

Ingredients:

2  cups all-purpose flour
1 tsp salt
1 tsp white sugar
1 tsp active dry yeast
1 tsp dried oregano
1 tsp dried thyme
1 pinch ground black pepper
3 tsp olive oil
1 cup water
1 cup mozzarella

Directions:

In a large bowl put together the flour, sugar, salt, yeast, oregano, thyme and black pepper. Mix in 1 tps of olive oil and water.

When the dough has pulled together, put in a lightly floured surface, and knead until smooth and elastic.

Lightly oil a large bowl, place the dough in the bowl, and turn to coat with oil.

Cover with a damp cloth, and let rise in a warm place for 20 minutes.

Preheat oven to 230 degrees C.

Punch dough down; place on greased baking sheet. Pat into a 1/2 inch thick rectangle.

Brush top with olive oil. Sprinkle with mozzarella cheese.

Bake for 15 minutes.

Serve warm.

Personal Suggestion: This delicious bread is a perfect appetizer; can be used as a side to many meals, as a base for pizza or as sandwich bread.  I like to serve the focaccia with a sauce made with olive oil and balsamic vinegar.
