Title: Eggs with mushroom sauce

The egg is a food rich in proteins of high biological value. The most commonly used in food is is the egg of the chicken, but today it is marketed in other species like quail and ostrich. It is an excellent food considering the benefits. As a food of high nutritional value, easy to chew and digest, we highly recommend their use especially in childhood, adolescence, pregnancy, lactation and in the elderly.

Ingredients:

  • 4 eggs
  • 2 Tbsp butter
  • 1/2 lb fresh mushrooms,sliced
  • 2 Tbsp flour
  • 1/2 cup white wine
  • 1/2 cup chicken broth
  • 3 Tbsp mayonnaise
  • 1 small onion, chopped
  • 1/2 Tbsp dried parsley
  • Salt and pepper to taste
  • 2 Tbsp melted butter
  • 3/4 cup Mozarella cheese

Directions:

Cook the mushrooms in  two Tbsp butter.  Stir in flour.  Mix well.

Add wine, broth, mayonnaise, onion,parsley, salt and pepper and Cook, stirring until the sauce is smooth.

Pour sauce in shallow baking dish.

Break eggs over sauce, taking care not to break the yolk.

Pour 2 Tbsp melted butter over the  eggs.

Sprinkle with cheese. Bake at 350 F until eggs are cooked for about 15 minutes.


Personal Suggestion: These eggs are delicious, the sauce of mushrooms gives  a special flavor. to the  dish.  I like to serve them with toast and coffee with milk.
