Curry is the most widely used spice in India, especially in the Madras area, hence the best curry. It is a powder of variable composition and consists mainly of different spices and dried herbs, coriander, cinnamon, ginger, cayenne pepper, cloves, nutmeg and turmeric. The latter is one of the most important ingredients is what gives the yellow color that characterizes it.

Ingredients:

  • 300 g rice
  • Double amount of vegetable broth
  • 2 tablespoons olive oil
  • 1/2 onion
  • 1 teaspoon curry powder
  • Salt

Directions:

Wash the rice, Drain and put to soak for 1 hour.

Heat oil and cook it finely chopped onion.

Add the rice, curry, vegetable broth and salt.

Cover and simmer for 15 minutes.

Uncover and reduce heat until the broth has completely dried.

Personal suggestion: You can use this rice to accompany any kind of meat or fish, you can add a few raisins before serving to give it a bittersweet taste.
