Title: Creamy Zucchini Soup

For children and adults there is nothing more comforting than a home-made soup, the creamy zucchini soup is a delicate and healthy soup for the whole family. Zucchini, a small summer squash, is botanically a fruit. However, In a culinary context, it is considered to be a vegetable; which means it is usually cooked and presented as a savory dish or accompaniment.

Ingredients:

25g butter
1 onion, peeled and chopped
1 carrot, peeled and chopped
1 stick celery, chopped
1 large potato, peeled and diced
6 small zucchinis, sliced
1.5 litres chicken stock
2 tbsp creme
salt and pepper

Directions:

In a large pot, melt the butter and cook the onion until soft and translucent.

Add the carrot, celery, potato and zucchini and continue to cook for several minutes, stirring with a spoon.

Cover with the stock, bring to the boil and simmer over a low heat for about 1/2 hour or until all the ingredients are soft.

Place all ingredients in a food processor and mix well.

After that using a sieve, force the vegetables through with a wooden spoon but don’t return any remaining fibre in the sieve to the pot.

Bring back to a simmer and season with salt and pepper, adding the cream before serving.

Personal Suggestion: Serve this creamy soup as an appetizer for dinner, can be accompanied with French bread or croutons.
