Coconut Flan - Desserts

The coconut is the undisputed protagonist of fairs and festivals, besides of being the common dessert of different preparations and common use of multiple preparations in craft and industrial baking. The most interesting market in Asia as Europe and Northern America is the packaged coconut water, and greater acceptance of high demand each year.
Ingredients:
- 1 can evaporated milk
- 1 can coconut cream
- 1 can condensed milk
- 3 eggs
- 1 teaspoon vanilla essence
- 1 cup sugar (for caramel)
- 1 / 2 cup water (for caramel)
Directions:
Cook sugar in a pot and water and heat over medium heat until it becomes liquid caramel (golden brown).
Quickly pour in the bottom of a mold.
Blend the remaining ingredients and put them into the mold where they put the caramel.
Cover mold with plastic kitchen and cook a water bath for 45 min. to simmer.
Check if it is cooked enough, or not moving it gently (the consistency should resemble that of the gelatin).
when cold remove the pudding from the mold and serve.
