Chicken Enchiladas – Mexican Food

Hello Friends, this next recipe “Chicken Enchiladas” are a traditional dish from Mexico. Enchilada is a corn tortilla rolled around, filling and covered with variety of ingredients, including meat, vegetables, cheese, beans or othercombinations. Enjoy this great Mexican Recipe with your family.

Ingredients:
6 Flour tortillas
4 Skinless, boneless chicken breast
1 Cup Shredded Cheddar cheese
1 Onion, chopped
1/2 Pint sour cream
1 tbsp parsley
1/2 tsp oregano
1/2 tsp Black pepper
1 cup taco sauce
1 cup tomato sauce
1/2 Cup water
1 tbsp chili powder
1/3 Cup chopped green bell pepper
1 Clove garlic, minced
3/4 Cup shredded Cheddar cheese
1/2 tsp Salt to taste
Directions:
Preheat oven to 350 degrees F.
Cook the chicken in a medium non-stick skillet, over medium heat; for a few minutes or until no longer pink and juices run clear.
Cut chicken into cubes and return it to the skillet.
Add the onion, sour cream, cheddar cheese, parsley, oregano and black pepper. Mix well.
Heat until cheese melts. Stir in salt, tomato sauce, water, chili powder, green pepper and garlic.
Roll even amounts of the mixture in the tortillas. Arrange in a baking dish.
Cover with taco sauce and 3/4 cup cheddar cheese.
Bake uncovered for 20 minutes.
Serve immediately.
Personal Suggestion: Chicken Enchiladas are an amazing dish, they should be served hot and may be accompanied with Mexican rice or Nachos. If you want you can add to the recipe ½ cup of cream with the taco sauce to cover the enchiladas before baking.
