The “Chow Mein” is a Chinese-American dish, consisting of vegetables, meat, shrimps, served with fried noodles.

Ingredients:

  • 250 g package of egg noodles medium sized
  • 2 tablespoons sunflower oil
  • 280 g cooked chicken breasts, cut into thin strips
  • 1 clove garlic, minced
  • 1 red pepper, seeded and cut into thin strips
  • 100 g shiitake mushrooms in sheets
  • 6 spring onions sliced
  • 100 g bean sprouts
  • 3 tablespoons soy sauce
  • 1 tbsp sesame oil

Directions:

Put the noodles in a large bowl and cut them slightly.

Cover with boiling water and let them soak while you prepare the remaining ingredients.

Preheat a wok over medium heat, add the sunflower oil and stir to coat the wok with oil. When this hot, saute for 5 minutes the chicken with garlic, peppers, mushrooms, scallions and bean sprouts.

Drain well and pour the noodles to the wok, stir and continue to cooking another 5 minutes. Rub the chow mein with soy sauce and sesame oil and stir so it is well blended.

Pass the chicken chow mein hot individual bowls and serve immediately.

Personal Suggestion: You can add one or all kinds of meats. Also other vegetables: Chinese bamboo, green beans, chayote or chili.  The oil can be replaced with sesame oil or olive oil.
