The “Changua” is a soup of the Cuisine of Colombia, more precisely from the highlands cundiboyacence. This dish is easily prepared using a few ingredients: milk, eggs and cilantro. Traditionally it is taken at breakfast.
Ingredients:
- 1 cup water
- 2 cups milk
- 4 eggs
- 4 teaspoons fresh cilantro
- 2 stalks scallions
- salt
- 1/8 teaspoon pepper
- 4 slices toasted bread, cut into cubes
Directions:
Chop the scallions and cilantro into small pieces.
In a saucepan add the water, milk and salt.
When the soup boils, crack the eggs and add them carefully to the soup without breaking the yolk.
Cover the pot and let it boil for two minutes or until they reach the desired consistency.
When ready to serve sprinkle the cilantro and onion, bread or toast is to add at once that it is serving the broth.
You can add the number of eggs per serving as you like.
Personal suggestion: This dish is perfect for a cold day. Serve the soup with bread. I suggest serve two eggs for each person.
