Hello friends, This is one of my favorites salads. The Cesar salad was created by Alex Cardini, who was Chef of Hotel Peñafiel in Tehuacán. Cardini, the son of an Italian immigrant, made the Caesar Salad specially for a gourmet contest in Tijuana, winning first place with his innovative dish. in this recipe I’m using an ingredient that is not included in the original recipe as is the shrimp, This variation also makes it very appetizing. Dressing:
2 Tbslight mayonnaise
2 Tbs water
2 Tbs fresh lemon juice
1 tsp grated Parmesan cheese
1/4 tsp freshly ground black pepper
1/8 tsp Worcestershire sauce

3/4 Cup seasoned croutons
2 Tbs grated Parmesan cheese
1 lb medium shrimp, cooked and peeled
