2 tablespoons Olive Oil
1/4 Onion, finely chopped
1 clove Garlic, minced
1 Serrano Chili, seeded and finely chopped
1 cup Tomatoes, chopped with juice
2 cups Chicken Broth
1/2 teaspoon Fresh Thyme, minced
1/4 teaspoon Cayenne Pepper
1 pound Shrimp, peeled and deveined
Salt, to taste and Freshly Pepper, to taste
2 cups cooked Long-Grain Rice
Direction:
In large saucepan over medium-high heat, warm oil.
When the oil is hot, add onion and cook about 2 minutes or until looks translucent.
Stir in garlic and pepper; add chili, tomatoes, broth, thyme and cayenne.
Bring to boil, reduce heat to low; cook uncovered about 15 minutes or until flavors have blended.
Add shrimp, cook just until shrimp turn pink and opaque, about 3 minutes. Season to taste with salt and pepper.
Place 1/2 cup scoop of rice in each of soup bowls. serve the soup over rice.
Personal Suggestion: I like the combination of a spicy soup with rice and shrimp, if you don`t like food very spicy, you can take out the cayenne pepper and add a little black pepper only.
