The Budding is a dish made with savory or sweet ingredients, the beaten eggs are added and cooked in a double boiler pan. Can be served cold or hot. the following recipe is a delicious fish budding from Spain, a perfect  dish for  a holiday celebration.

Ingredients:

  • 1 k. clean white fish cooked (can be frozen)
  • 3 tablespoons ketchup
  • 3 sticks of crab
  • 1/2 k of prawns or shrimp (can be frozen)
  • 6 eggs
  • 1/4 of cream
  • Mayonnaise
  • Bread crumbs
  • salt and butter
  • Curly endive

Directions:

In a large bowl mix crab sticks, fish, tomato sauce, cream and 6 egg yolks. Season and beat with an electric mixer.

The egg whites until stiff ride and added to the previous preparation along with the shrimp. Stir and pour into a greased rectangular pan with butter and some bread crumbs.

Preheat the oven to 180 º and introduces the cast in a water bath until set (about 45 minutes). The mold removed and cooled in the refrigerator.

Serve in a dish covered with endive and mayonnaise. Prawns are reserved to place over the pudding.

Personal Suggestion: This dish can use frozen fish instead of fresh. Optionally, you can add to the mass of 3 or 4 budin ersatz crab sticks, cut into small pieces.
