Hello friends, the following recipe comes from the beautiful country of Mexico, the story says that this salad was a favorite of Mr. Diego Rivera, Mexican painter who made murals with social issues, he was considered one of the greatest artists of this century. Born in Guanajuato, and was educated at the Academia de Bellas Artes de San Carlos in Mexico City.
In Latin America The vegetables are prepared almost daily, they are very nutritious and complements a balanced diet, they are prepared in stews, boiled, fried, in sauce and salads.

Ingredients:

Salad:

5 cups of beans (softened)
A handful of finely chopped coriander
Ten well chopped radishes
200 grams of mozzarella cheese, chopped

Dressing:

Four tsp of extra virgin olive oil
1 tsp of balsamic vinegar
A bit of coriander
Oregano
Salt and pepper

Directions:

Place in a blender all the dressing ingredients.  Mix well.  Set apart.

In a Medium bowl place: Beans, corainder, radishes and mozarella cheese.  Stir well until all ingredients are well combined.

Spread the dressing over the vegetables,  stir again.

Place the salad in the refrigerator for at least 20 minutes.

Remove just before serving.

Personal Suggestion: This salad is delicious, to accompany it is well with toasted bread or browned tortillas.  Enjoy this great recipe with family and friends.
