The insoluble fibers of this grain, helps for a good digestion, improve intestinal activity, prevent constipation and reduce cholesterol. Enjoy this great Breakfast recipe with your family.
Ingredients:
1 egg
3/4 cup sugar
3 medium bananas, mashed
1/2 cup oatmeal
2 cups flour
1 tsp. baking soda
1/2 tsp. salt
1/3 cup vegetable oil
1 teaspoon ground cinnamon
1/3 cup chopped walnuts
Directions:
Heat oven 375ºF.
Beat the egg, the oil and the sugar in a medium bowl, until smooth. Next stir in bananas.
Combine well the dry ingredients: (oatmeal, flour, sugar, baking soda, walnuts; cinnamon and salt).
Blend into the banana mixture, just until moistened.
Spoon in greased muffin tins, 3/4 full.
Bake for 20 minutes or until done.
Personal Suggestion: This muffins are very easy to prepare, you can make then for your weekends breakfast or for a snacks for your kids. If you like more flavour you can add 1 teaspoon of nutmeg and some raisins.
