Hello Friends, this next recipe “Baked Salmon with Tomatoes and Mushrooms” is a delicious option for a healthy dinner. The Salmon is an oily fish rich in omega-3, helps lower cholesterol levels and triglycerides. Salmon is an excellent source of high value proteins. Enjoy this nutritious fish recipe with your family.

 

Ingredients:
6 salmon fillets
1 1/2 cup sliced mushrooms
5 tomatoes, chopped
1/2 cup Tomato sauce
Salt and pepper to taste

Directions:

Heat oven to 375°F.

First take each fillet and put salt and pepper.

Place the fish fillets, skin sides down in a baking dish, previously sprayed with oil or butter.

In a saucepan over medium heat, put the mushrooms and the tomatoes and cook for 2 minutes, add the tomato sauce and a pinch of salt, cook for another 3 minutes or until vegetables are blended.

Spoon the vegetables over fish in the baking dish.

Bake for 20 minutes or until fish flakes easily with fork.

 

Personal Suggestion: The Salmon is a delicious fish. You can serve this recipe with rice or baked potatoes.  If you like the basil, you can add some basil leaves to the vegetables.
