Hello Friends, this next recipe “Baked Potatoes With a chili bean sauce ” is a delicious option for a Mexican dinner. The potato is a nutriment very “grateful” in the kitchen because you can prepare them in many ways (stewed, steamed, boiled, mashed, fried, baked, grilled, et.). Enjoy this Mexican recipe with your family.

Ingredients:

6 large baking potatoes
1/2 pound ground beef
1 small zucchini, diced
1/2 cup chopped onion
1 cup chili or red beans
1 cup shredded cheddar cheese
Sour cream
1 cup Tomato sauce
2 Tablespoons Fresh Parsley
1 Teaspoon Dried Basil
1 Teaspoon Dried Oregano
1 Teaspoon Garlic
1 Tablespoon Olive Oil
Salt and Pepper - to taste

Directions:

In a skillet put olive oil and cook for 8 minutes the ground beef with the parsley, basil, oregano and garlic.

Add onion and zucchini; cook until onion is transparent. Heat chili in a saucepan; stir in ground beef and vegetables.

Bake potatoes in a microwave or conventional oven.

Slice baked potatoes open, spoon the chili mixture into each potato and top with cheese, sour cream and tomato sauce.

Serve immediately.

 

Personal Suggestion: This potatoes are amazing, you can serve them with a green salad. If you want more spicy this recipe, you can add finely chopped red chili.
